Quality food is the foundation of a healthy learning environment. Our Child Nutrition Department is hard at work, ensuring the food in our school is healthy and delicious. You don’t need to take it on our word. You can try our recipes yourself. 

This broccoli cheddar is the perfect comfort food for winter. It is delicious and is made by hand from a list of simple ingredients. Bon Appetit!

Cheddar Broccoli Soup (Serves 10)

Ingredients

  • Butter ½ C
  • Onion ½ C
  • Flour 5/8 C
  • Salt 5/8 tsp
  • Pepper 1/4 tsp
  • Chicken base 2 ½ tsp
  • Water 2 ½ C
  • Milk 5 C
  • Cheddar shredded cheese 10 oz
  • Broccoli florets 14 oz 

Directions

  1. Melt butter in a large kettle. Add onions and saute until tender.
  2. Add flour and seasonings. Stir until blended. Cook for five minutes, stirring often.
  3. Stir in chicken base, then add water and milk, stirring constantly.
  4. Reduce heat and cook until thickened, stirring often. 
  5. Add cheese and stir until melted.
